Blueberry Crumble

Hi folks!

The warm weather is upon us 😎 and I am loving all the summer seasonal fruits (peaches, watermelon, and berries – cherries, strawberries, raspberries, and BLUEBERRIES!)

Today’s recipe is a Blueberry Crumble

I have been making this scrumptious crumble every 2 weeks for the past two months! – Because of the frequency and rate at which I devour this crumble, I modified it to make it healthier.

What you need

1 lb of blueberries – I use frozen berries, but fresh berries should be fine

1/2 cup of oatmeal flour (just blended oatmeal)

1/4 cup almond meal

1/4 cup whole wheat flour

8 tbsp unsalted butter (salted is fine as well)

1 tbsp lemon juice

2.5 tbsp coconut sugar (can sub for brown sugar)

Directions

Heat oven to 350F

Defrost berries for 10 mins

Mix flours (oat & whole wheat), almond meal, 1 tbsp sugar together

Soften butter and add to flour mix – mix till you get a crumble like texture

Add sugar (1.5 tbsp) and lemon juice to berries

Add 1 tbsp whole wheat to berries

Layer flour mixture on top of berries

Bake for 35 minutes

Let it cool and enjoy by itself or with a scoop of vanilla ice-cream!
