Hi ya’ll – It’s a 3 day weekend – yay!!!
So its labor day weekend and that means one last BBQ opportunity for most folks – So here is a good pasta salad to enjoy with loved ones to celebrate end of summer
What you will need –
Pasta Salad Ingredients (adapted from Pinch of Yum)
1 box of whole wheat pasta – 375 g (any kind: rotini; farfalle; penne) – I used Rotini
1/2 cup sweet corn
1/2 red bell pepper
1/2 cucumber
1/2 cup vegetable medley
1 chorizo sausage
1/2 cup shrimp
3/4 cup of mozzarella cheese balls
1/4 red onion
1 roma tomato
1/4 cup jalapeno peppers (can sub with black olives)
1 tbsp water
Italian Herb Dressing Ingredients (adapted from Pinch of Yum)
3/4 cup vegetable oil (you can use olive oil or grapeseed oil)
2 tbsp water
2 tbsp white rice vinegar
2 tsp coconut sugar
1 tsp dry oregano
1 tsp dry sweet basil
1 tsp dry garlic
pinch of salt and black pepper to taste
Directions
- Bring water to a boil and add pasta (cook according to package direction)
- In the meantime, de-seed tomato & cucumber and cut into small cubes
- Cut up red bell pepper and slice red onions
- Cut sausage into bite pieces. Can leave shrimp as is or slice in half
- Heat pan with water, add sausage, shrimp, corn, veggie medley, and red pepper. Cook for 5 mins
- Once pasta is cooked, let it cool for 5-10 mins
- Add your sausage mix and combine well
- Chill pasta in fridge till ready to eat
- Mix all Italian herb dressing ingredients in a small mason jar and shake
- Once pasta is chilled, add dressing and serve
- Bon appetite
