Yummy Banana Wheat Bread

Today’s recipe is a healthy delicious banana bread

In my opinion, fall is the best season for warm delicious breads (banana, pumpkin, etc). Plus, who doesn’t love sweet aromas of cinnamon and vanilla.

Anyhoo, this delicious bread is great on a cool fall evening with a good cup of tea while cozying up on the couch and watching your favorite fall TV shows.

Is anyone as excited as I am about fall TV shows?  Some of my TV shows are back (Blindspot; Lethal Weapon; Designated Survivor, Chicago Fire, Madam Secretary, etc) – so yay!

Ok, back to baking….here’s what you’ll need:

Dry ingredients:

1.5 cups of whole wheat flour

1 tsp baking soda

1 tsp coconut sugar

1/2 tsp cinnamon

1 tsp maca powder

1 tsp chia seeds

1 tbsp cacao nibs

Wet ingredients:

3 bananas (mash 2 bananas and save one)

1 egg

1/4 cup peanut butter (I used chunky PB)

1 tsp vanilla extract

1/4 cup water

Directions
  1. Preheat oven to 350 F
  2. Lay parchment paper into baking pan(s)
  3. Combine all dry ingredients in a large bowl
  4. Mash the bananas, then add eggs, vanilla extract; peanut butter and water
  5. Add the dry ingredients into the banana mixture
  6. Pour batter into baking pan(s)
  7. Slice the remaining bananas into circle shapes and layer over batter
  8. Bake for 25-30 mins
  9. Let cool
  10. Bon appetite
